Located in the heart of the town center of Saint-Julien-le-Faucon, the town of Mézidon-Vallée d’Auge decided to acquire this commercial space in 2019 in order to boost and sustain the local trade of this historic town. . The dilapidated parts were demolished in favor of new structures, adapted to health and regulatory requirements, in proportions almost identical to those exploited previously. Following a call for applications, the city decided to entrust the co-management of the establishment, completely rehabilitated, to Guillaume Armand, sommelier, and Pablo Jacob, chef.
The establishment now benefits from a modern kitchen equipped with a large dining room that can accommodate around forty people. A terrace in the inner courtyard completes this workforce. The restaurant also has an additional capacity of about twenty seats, outdoors, on the road side, intended to enhance the business.
Funding for these investments is made up in part by the sale of housing located in the delegated municipality of Saint-Julien-le-Faucon, and by subsidies granted for the revitalization of town centres. The total amount of the operation amounts to 356,769 euros, an amount which corresponds to the purchase of the property, the missions of the SPS technical controller, the fees of the firm in charge of the project management, as well as the works. Subsidies and public aid amount to 48.49%, distributed as follows: 21.02% by European Union funds, ie 75,000 euros. 16.26% by the Rural Territories Equipment Endowment (DETR), i.e. 58,000 euros. 11.21% by the competition fund of the Lisieux Normandy urban community, i.e. 40,000 euros. The remaining charge for the city is 51.51%, or 183,769 euros, which will be covered by the rents from the restaurant. François Aubey concludes: “Opening Thursday, May 26, it will be prudent to book. »
