The confectioners have imagined a new Christmas log for the 22nd year in a row. And it will be the first with gingerbread, combined with pear.
You’ve been waiting for it, here it is the 2022 Christmas log from the Haute-Loire patisserie. These Algerian artisans, gathered within the Union of Pastry Chefs of Haute-Loire, have been working since this summer to create this dessert that will accompany your festive tables.
The first in 22 years
This Christmas log consists of a gingerbread biscuit, a pear compote, a Bavarian cream with vanilla and white chocolate, a crispy gianduja. “We have never used gingerbread, this is the first in 22 years,” announces Yann Sabot, president of the Syndicate of Confectioners. For the flavors, the confectioner has played the card of tradition for this tree trunk called “Pear of Spices”, which we could taste and appreciate in the preview.

This year-end dessert is gradually arriving in the shops of the 13 artisans involved. “Customers are waiting for it. This Christmas log is basically part of the Top 3 bestsellers.”
