The place

Very close to the judicial city, Polypode, whose name evokes an edible fern found in the Auvergne forests, is an address dedicated to fine gourmets. In this uncluttered decor, furnished in a contemporary style, you don’t come to eat, but to treat yourself like an epicurean to a moment of gastronomy, taking your time.

Polypode is the restaurant of two friends in their thirties, who studied at the hotel school in Chamalières. They had worked together in Clermont before opening, in 2018, this address which resembles them.

In the dining room and in the pastry, Cyril Pinon officiates. In the kitchen: Quentin Brunet, passionate and very inspired chef, distinguished in 2019 among the Young talents of the Gault&Millau guide.

The kitchen

From neo-bistro cuisine to gastronomy: Quentin and Cyril took the plunge this spring. “We have decided to assert our gastronomic offer a little more, by focusing our menus even more on discovery”, explains the chef. On the plate, it’s a festival even before the first bite.

A feast for the eyes that these poetic presentations, playing with colors and textures; beautiful products from here and elsewhere, sublimated in creative recipes where plants hold a privileged place.

Our favourite: the carte blanche menu

If you like to eat and are curious, trust the chef by opting for the carte blanche menu! No dish titles, just the names of the products around which the meal will be composed, that’s the principle. This can give: Foie gras/pak choi/miso/shiitake. Line-caught pollack/cauliflower/kalamansi/cumin. Strawberry/verbena/lemon/meringue.

When ordering, you will be asked if you have any allergies, things you don’t like. Then on to the kitchen! “We work with products of the moment, but according to our inspiration of the day. This allows greater freedom,” says Quentin Brunet.

We like the idea and we adored the menu as a whole, with a particular crush on the seared foie gras wrapped in a crunchy sheet of pak choy cabbage, accompanied by shiitakes and a light sauce subtly flavored with miso.

What are we drinking?

We asked the sommelier for advice and we did well, it was an opportunity to taste a superb Saint-Nicolas-de-Bourgueil, “Les Coutures” by Frédéric Mabileau.

The bill

At lunchtime, Return from the market menus at €28 and €32 (except Saturday). Menus at €47 and €58 for lunch and dinner. Meal vouchers not accepted. Accessible to people with reduced mobility. Terrace.
