Carcassonne: chef Frank Putelat again awarded, this time it’s the Gault&Millau d’Or Occitanie

Considered this year as the best chef in Occitanie by Gault&Millau, Carcassonnais Frank Putelat is nonetheless having difficulty recruiting staff for his two Aude gastronomic addresses.

The ceremony took place this Monday, May 23 at the Relais&Château Domaine de Verchant in Castelnau-le-Lez (last year it took place at the Hôtel de la Cité in Carcassonne). Frank Putelat, who recently celebrated the tenth anniversary of his two stars in the Michelin Guide, has therefore received the honors of another prestigious guide, the Gault&Millau. “It’s a pleasure, after the Pourcel brothers, to be recognized in this way, especially after these two years of Covid adventure. Excellence pays, we are proud to still be there, this distinction is that of the regularity of the work , even if we are short of staff”explained the chief at the end of the ceremony, pointing to the lack of manpower.

“We are missing 10 people at the Parc and 15 at the Aux Quatre Temps brewery, in short we have the same problems as all the other players in the sector” : so much so that Frank Putelat plans – for the month of June – to close his brasserie at the Portail des Jacobins two days a week. “Hoping to be able to provide normal service in July, August!” The concept of the brasserie in downtown Carcassonne being to be open seven days a week, from 7 a.m. to 10 p.m. in order to offer a continuous service “at 4 times of the day”, breakfast, lunch, snack and dinner.
